Apple Goat Cheese Salad

This was a delicious apple, goat cheese, & walnut salad with a quick rice wine vinaigrette. Goat cheese has to be one of my favourite additions to a salad - creamy, tangy, and bright. I'm also a big fan of fruit on salad, apples are a great gateway into this area with others like grapes, oranges, and strawberries really shining on salads. As usual, I use activated walnuts on my salad as they taste better to me, and are easier to digest. Now if you're having trouble getting excited about salad, try using different vinegars and experimenting with dressings. Typical dressings are 2 parts oil, 1 part acid, and the rest is up to you. Don't forget to season your dressing with salt to amplify the flavours. Adding honey or sugar to your dressing can cut through the tang of the vinegar as well. The point is to make a dressing that makes your salad the star of the show - eating healthy doesn't have to be a chore. Lately, I've been inspired by my brother's cooking to make more salads that taste incredible. Whenever I'm at Kyle's house, I always go back for seconds of salad (as well as seconds of the delicious prime rib he served). His dressings are always perfectly balanced and topped with delicious garnishes.

What you'll need:

Salad

  • Baby Spinach
  • Goat Cheese
  • Raw Walnuts
  • 1 Ambrosia Apple
  • Salted Sunflower Seeds
  • 1/2 cup cooked Black Eyed Peas

Dressing

  • 2 parts Olive Oil
  • 1 part Rice Wine Vinegar
  • 1/2 part Raw Honey
  • Salt (to taste)
  • Pepper (to taste)

Preparation:

Add ingredients of dressing in a small mason jar and shake vigorously until emulsified (about 20 seconds). Pour over salad and mix thoroughly. Enjoy!
