Overnight Oats To-Go

Overnight Oats are a great way to get some slow-burn carbs first thing in the morning. Brekkie has always been a challenge for me - I'm never hungry in the morning but it's important to start the day off right. This is a great solution for people who feel too busy to eat in the morning as it can be pre-made in batches and thrown in your bag if you're in a rush. Customize the toppings to keep it interesting from week-to-week.

Fill mason jar 1/3 full of steelcut oats or granola and fill with non-dairy milk (I prefer coconut milk) or water to barely submerge the grains. Garnish with 2 Tbsp of natural peanut butter, shredded coconut, dried cranberries, pumpkin seeds, and activated walnuts. 

**Activated walnuts are simply raw walnuts soaked in water overnight to make them easier to digest and absorb nutrients.**

What you'll need:

  • 1/2 cup Granola

  • 1/2 cup Coconut Milk

  • 2 tbsp Natural Peanut Butter

  • 1 tbsp Dried Shredded Coconut

  • 1 tbsp Dried Cranberries

  • 2 Tbsp Activated Raw Walnuts
